Driving Southeast to Klamath, California

Eric and I start our drive southeast to Klamath, California, knowing that a giant storm is due to hit the West Coast.  




The drive starts on 

Oregon & we are on
our way to California.





Eric and I have reservations set further south and will be keeping them.






We will pass by the northern
entrance to Crater Lake.

covers the ground.

We will stop in Crescent City
to get Covid Booster Shots &
Diesel for the motorhome.

Some electrical utilities are carefully wrapped in plastic and securely taped.  This campground is in the process of closing for the season soon.

Heavy rains are expected tomorrow.  I'm going to Tex Mex Soup.  Here's the recipe for this Paleo Diet inspired soup:

Tex Mex Chicken Soup for 4 Quart Crock Pot

1 ½ lb Boneless Chicken

4 cups Low Salt Chicken Broth

2 small cans OR 1 large can of Diced Tomatoes

2 Peppers, Chopped

1 Onion, Finely Chopped

2 Tablespoon Chili Powder

1 ¼ Tablespoons Garlic

2 Teaspoon Cumin

Combine all ingredients.  Cover, cook on LOW until Chicken is thoroughly cooked through, 7 to 8 hours.

Remove Chicken - Shred & return to soup

Can be served with Cheese, Avocado, Cilantro

Season with Salt & Pepper to taste
