St. Patrick's Day Celebration in Las Vegas, Nevada

Social distancing keeps people healthy.  It is NOT an excuse to skip a St. Pattrick's Day Celebration.

A Late Lunch at SKINNYFats in Las Vegas

Eric found SKINNYFats while looking for someplace to eat lunch.  He loves the concept of offering a variety of healthy foods AND foods with higher amounts of and salt.

served in a Cucumber Boat, with
 Spicy Slaw, Almonds,  Spicy
Aoli & Avacado



CauliFire: Cauliflower. Buffalo
Sauce, Pico & Cilantro
& Brussel Crowe: Sauteed
Brussels Sprouts, Carmelized
Onions, Raisins, Capers,
Almonds & Balsamic Glaze





These dishes total 735 calories
& Eric is happy to share.












We skipped the Beer and opted for water to fully take in all the tastes and textures of our lunch.




My choice is The Classic:
A Beef Patty with Cheddar
Cheese, Lettuce, Tomato,
Pickles, SF Sauce served 
on a Brioche Roll with a
side of Truffle Fries.





The verdicts are in:  
Tu-Nuts is a tasteful melange of delicate flavors offset by the Spicy Aoli.  
CauliFIRE is spicy with a lingering hot finish.  
Brussel Crowe is oh so tasty and not a large enough serving, sigh...  
The Classic Burger is perfectly prepared and Truffle Dusted Fries are amazing!

Eric and I agree that cruising the internet for lunch spots is well worth the time.  SKINNYFats has Las Vegas and Henderson, Nevada locations as well as one in Dallas, Texas and one in Salt Lake City, Utah.  I hope the franchise grows so Eric and I can enjoy delicious, tasty Healthy and Happy meals in more places across the US.          :   )

Carroll Shelby became a race car driver after serving in the US Army Air Corps in World War II.  He won 12 races in two years.  The racing was great, but the complex, high maintenance engines in European cars were a challenge to all racing teams. 

After winning the 24 hour Le Mans Race in 1959, Shelby left auto racing.  He started Shelby American in 1962 to manufacture sports cars with easy to work on V-8 engines at half the price of Ferraris, Masaratis, etc.

The Shelby Cobra was well received in the US.  The high-performance cars regularly won races against Corvettes.  On July 4, 1965, the Shelby Daytona Coupe beat Ferrari to win the World Manufacturer's GT Competition.







Ford and Shelby American partnered from 1965 to 1973 to bring high performance and speed to the Mustang line.

In 1982 Shelby American and Chrysler Corporation partnered to reestablish Dodge's performance image.  The result was the Dodge Shelby Charger.  The collaboration lasted
until 1989.

Shelby American "shifted gears" in 1998 when it opened its Las Vegas facility to welcome visitors and provide factory tours while continuing to build high-performance sports cars.
